Blended dates bring the sweetness and the chew. They are vegan too, so they work for almost everyone at the table.

Method

  1. Heat the oven to 350°F (175°C) and line a tray.
  2. Blend the dates with the hot water into a thick paste.
  3. Stir in the almond butter, flax mixture and vanilla.
  4. Add the oats, almond flour, cinnamon, baking soda and salt, then the chopped dates.
  5. Scoop, flatten slightly and bake for 11 to 12 minutes.
  6. Cool on the tray. They get chewier as they rest.
